Ingredients :
6-8 pieces ox tail / beef short ribs (season with
Salt and pepper)
1 tbsp tomato paste
1 cup red wine or port
1 whole glove of garlic ( cut in half)
1 oz bacon lardon
6 oz chestnut mushrooms (cut in half)
Methods:
Brown the ox tail/ beef short ribs with olive oil
Add the tomatoes paste
Add the wine, bring it to boil and reduce a bit
Put the garlic in
Pour beef stock until just about an inch under
The beef
Cover with foil cook in the oven of 170c for
2 to 2 and a half hour
Take the beef out
Fried the bacon and mushrooms
Filter the source, pour it over the beef
Arrange the bacon and mushrooms on top.
