Stewing Beef with Red Pepper and Paprika

Ingredients:

1 kg stewing beef ( cut into large cube )
2 red peppers ( de-seed and chop )
50 g / 2 oz butter (melted )
300 ml beef stock
2 onions ( chopped )
3 gloves garlic  ( sliced )
4 tbsp olive oil
4 tbsp mild paprika
2 tsp mild chilli powder
Salt and freshly ground black pepper
1/2 tsp dried marjoram
3 bay leaves
1 tsp cumin seeds ( optional )


Preheat the oven to 150 degree.

Cooking:

Place the peppers and butter in a jug . Using a hand blender or food processor, blend the peppers for 2 minutes, until smooth. Pour in the sock and blend for 1 minute until well combined.

Heat the oil in an ovenproof casserole and cook the beef and onion for 5-10 minutes, until is browned all over and the onions are softened, add the garlic, paprika, chilli  power and pureed papper. Bring to the boil.

Stir in seasoning, marjoram, bay leaves and cumin and bring back to the boil.
Cover and bake for 1 1/2 -2 hours, stirring twice during cooking, until the beef is tender.
