Steam whole Chicken with Ginger and Spring onion - 薑蔥蒸雞

Ingredients:

1 whole chicken
1 big piece of Ginger ( cut into pieces )
4 spring onion ( cut into long strips )

Marinade:
2 tbsp Shaoxing wine ( 紹興酒 )
A littele white pepper
1 tbsp salt
1 tbsp light say sauce
A little sesame oil


For  sauce thickening:
 Oyster sauce , cornflour, sesame oil and a little water, mix well set aside.


For topping:
1 piece Ginger ( cut to very fine strips )
2 spring onion ( cut to very fine long strips )


Cooking:

Rub salt and pepper inside the chicken then pour in 1 tbsp wine. Put the ginger and spring onion inside.
Rub the skin with light say sauce, sesame oil and the rest of wine.
Put it in a deep plate and steam for about 45-50 minutes.
Take the chicken out, let it cool a bit before cutting it.
Pour the juice from the plate to a pan, bring it to boil, add in the thickening , stir well until thicken.
Cut the chicken into bite size, place on a warm serving plate, put the topping on top, pour a little hot oli over the topping just to bring out the fragrant of the spring onion & ginger.
Then pour the sauce over and serve.
