Ingredients:
500g dried spaghetti
200g smoked pancetta, rind removed ( if you couldn't get it, can use bacon )
2-3 tbsp extra virgin olive oil
3 garlic cloves, finely chopped
Flat-leaf parsley leaves, finely chopped ( about a hand full )
4 large eggs, beaten
100g finely grated cheese, ( parmesan if you can get it )
Salt and freshly ground pepper
Cooking:
Boiled spaghetti in plenty of salty water, cook for 9-10 minutes.
Meanwhile cut the pancetta/bacon into short little strips ).
In a deep frying pan, add oil and pancetta/bacon, fry it until golden, add garlic & parsley, cook for a minute or two, remove from heat and set aside.
Drain the spaghetti, tip into the frying pan,( do not use any heat )add the beaten eggs and half the grated cheese, toss together well, season with salt 7 black pepper.
The heat from the spaghetti will be sufficient to partly cook the egg but still moist and creamy.
Never add cream to carbonara, egg will make the pasta creamy and moist.
