Butter 8oz (soften)
Caster sugar 4oz
Egg 2
Flour 8oz
Self-raising flour 4oz
Bicarbonate - soda 1tsp
Ground cinnamon 2tbsp
Sugar 5oz
Mix it in a bowl for later use
Methods :
1. Beat butter and caster sugar together until light and fluffy.
2. Add in the egg one at a time and beat well.
3. Sift together the flour, self-raising flour and bicarbonate - soda together, add to the butter mixture and mix well.
4. Put the dough in a plastic bag and knead briefly to form a round ldough, refrigerate for 2 hours.
5. Take the dough out from the fridge, make it into small balls and roll them in the sugar mixture.
6. Place 2 inches apart on a baking tray line with baking parchment paper and bake in a pre-heated oven of 180 c for 8 minutes or until golden.
