Ingredients (材料 ):
1 whole chicken ( 雞 )
water ( 水 )
2 cups uncooked rice ( 米 )
1 tbsp chopped garlic ( 1 湯匙 蒜頭)
Dipping Sauce (調味醬 )
2 tbsp ginger, chopped ( 2湯匙薑末 )
1 tbsp spring onion ( 蔥末 )
Hot cooking oil ( 熱油 )
A pinch of salt ( 鹽少量 )
Cooking:
Pour hot oil over ginger, spring onion and salt and set aside.
Bring water( just enough to cover chicken ) to the boil in a pot.
Put in chicken, cover bring to the boil again and turn off the heat, leave chicken in for 35-40 minutes. Remove chicken put in ice cold water until the under skin start to form a jelly. Keep the water for later use,. Then chop chicken into bit size.
Heat oil. Fry chopped garlic. ( do not let it brown ) Add the rice and stir well. Pour the mixture into rice cooker, add a bit of salt and 2 cups of chicken stock ( water we use to boil chicken ). cook until the rice is done.
Serve the rice with chicken and dipping sauce.
