Ingredients:
4 eggs
10 oz bananas ( weight of no skin ) ( sliced )
1 oz evaporated milk ( 花奶 )
10 oz plain flour
1tsp bicarbonate of soda ( 蘇打粉 )
2 oz vegetable oil
Cooking:
Preheat oven to 180 degree.
Grease baking tin with un-salted butter.
Beat eggs & sugar till fluffy. Add in sliced bananas & evaporated milk whisk till well blended.
Sift flour & soda together on a sheet of paper. Gradually fold in .
Add in oil and mix well. ( oil should be add in slow and hand work fast )
Bake for 40 -45 minutes
Can make 2 one pound loaf.
for best result use very ripe banana.
