New York Cheese Cake

Ingredients:
200g digestive biscuits
75g butter, melted
900 g full fat cream cheese, soften.
200g caster sugar
200 ml soured cream
3tbs plain flour
3 eggs plus 1 egg yolk, lightly beaten
2tsp vanilla extract
2 tsp lemon zest
2 tsp lemon juice
Method:
Preheat the oven to 180c/fan 160c
For cake base:
1. Melt the butter.
2. Place the biscuits in a plastic bag and crush with a rolling pin to fine crumbs.
3. Combine the melted butter and the biscuits crumbs, mix it well then place them in the base of a 9 inch spring form cake tin, flatten by using your finger.
4. Bake in the oven for 10 minutes until golden, leave to cool while you prepare the filling.
For Cream cheese filling:
1. Beat the cream cheese and sugar until smooth then add lemon juice and zest, beat in sour cream and flour. Gradually add the eggs and vanilla extract, beat well.
2. Pour the cream cheese mix on to the biscuit base, Bake in the oven for 45 minutes.
3. The cheese cake should be just set with a slight wobble and still be cream on top with just a slight golden hint around the edges.
4. Turn off the oven and prop open the door, leave the cheese cake to cool in the oven
( this prevents the top from cracking )
5. Once the oven is cool you can take the cheese cake out to cool completely before removing from
The cake tin.
