1 tablespoon Olive Oil
1 tablespoon butter
1 medium onion (chopped )
2 cloves Garlic ( minced )
2 Large Ripe Tomatoes ( chopped )
2 cups Chicken broth
1 cup rice
Method:
Heat olive oil and butter, add onion and garlic, saute until onion is soft,
Add tomatoes, then cover, simmer for about 10-15 minutes.
Pour in chicken broth, bring to a boil then add rice, salt, and pepper to taste.
Cook the rice until done or you can put them into a rice cooker to continue cooking.
