Steamed Chicken in Sesame Oil - 蔥花麻油雞

Ingredients:
1 Chicken about 1.5kg
1 stalk spring onion, roughly chopped
1/2 red chili, shredded

Seasonings:
1 tbsp garlic, minced
1 tbsp ( peanut butter )
2 tbsp sesame oil
1 tbsp salt 1/2 tbsp sugar
1/2 tsp chicken powder
1 tbsp rose wine ( 玫瑰露酒 ) can replace with Cheese cooking wine. 
1 tbsp fish sauce
a little white pepper


6 slices ginger, shredded
2 stalks spring onion


Methods:
Mixed all the seasonings together, blast all over the chicken inside and out, stuff the chicken with ginger and spring onion and marinate for 2 hours. then steam for 40 minutes over high heat.
Take the chicken out and cool.
Drain the juice, take away the fat from juice and boil it under medium heat until reduced about 1/3. Add a little oyster sauce and sesame oil. 
chop the chicken, pour the juice over the chicken, garnish with spring onion and chili.
