蔗糖年糕 Chinese New Year Pudding

材料:糯米粉14安士 (Glutinous rice flour 14 oz.)
澄麵8安士 ( Wheat Starch 8oz. )
蔗糖(片糖)12安士 ( Brown Sugar 12 oz. )
水3杯 (Water 3 cups )
油1 1/2湯匙 ( Lard 1 1/2 T.B. )
製法:
糯米粉,澄麵混合篩在大盆內. Sift glutinous rice flour and wheat starch into a bowl.
水3杯加片糖煮至完全溶化後加入油,待冷約15~20分鐘。Boil 3 cups of water with brown
sugar until dissolved, add lard/ oil cooldown for 15-20 minutes.
將糖水冲入糯米粉和澄麵中,邊冲邊用木棍搞拌, Pour fluid mixture into a greased
羔盆搽油,將混合料用篩隔住倒入盆中。 tin through a sieve.
中火蒸二小時。 Steam pudding over medium heat
for 2 hours.
