1 lb 6oz live clams
1/2 cup olive oil
20g butter
2 garlic cloves, very finely chopped
1 lemon, half slice, half wedge
1 bunch of fresh coriander, chopped
Heat the olive oil add butter, garlic, lemon slices and bit of salt and pepper.
add the clams, cover and shaking the pan frequently un till the clams open, discard any that remain closed.
add chopped coriander, serve immediately with the lemon wedges.
