Oven cooked chicken with rice

Serve 4 to 6
Ingredients:
Chicken thigh 8 or 12
Onion 1 big one ( chopped )
Garlic 2 Gloves ( finely Chopped )
Tomatoes 4 ( roughly chopped )
Portuguese Chorizo 1 ( slice )
Peas frozen or fresh 60 g
Saffron a pitch
Salt and pepper
Rice 2 or 3 cups
Water 2 or 3 cups
Method:
Preheat oven at 180
Heat a little olive oil in an ovenproof casserole. fried the chicken thigh, when brown, add onion and garlic.
Cook the onion until it starts to soften.
Add tomatoes sauce a bit, add chorizo, saffron and peas, season with salt and pepper.
Put the rice in stir everything together, pour in the water, bring it to boil,
Cover the casserole with a lid.
Put in the preheated oven, bake for about 20 to 25 minutes to until the rice is cooked.
Switch off the oven and leave to stand inside the oven for another 15 minutes.
